Recipe: Exotic Chickpea Stew

We presented this recipe on a blustery cold day to my mom's TOPS Club. It was well received with its warming spices, big flavour and nutritious ingredients.

Ingredients:

2 Chorizo sausage, sliced 1 large red onion, sliced

4 garlic cloves, minced 2 tsp. coriander seeds

1 tsp. cumin seeds, crushed 1 tsp. fennel seeds

1 - 2 tsp. paprika 1 lemon cut into wedges

1 small bunch parsley, chopped 7 oz. fresh spinach, chopped

Plain yogurt, 3% fat or higher 1-14 oz. can diced tomatoes, drained

2 - 14 oz. cans chickpeas, rinsed and drained

Method:

In a heavy pan, cook the sliced Chorizo sausage, onion, garlic and spices until the onions turn golden. Stir in the tomatoes. Add the chickpeas and simmer for about 7 minutes. Add the parsley and season with salt and pepper. Add the spinach leaves, cover pan, and steam briefly. Transfer to a bowl and serve immediately with lemon wedges and a dollop of thick, creamy plain yogurt.
